    Tonight, I made marinated chicken with satay peanut sauce and rice, and it was delicious.

    I made the marinade with lime juice, olive oil, chili oil, chili powder, diced garlic and ginger, black pepper, salt and coriander.

    The satay sauce was store bought, but I added some olive oil, more chili oil and curry powder.

    I cooked the chicken on the George Foreman grill, which was really easy and quick. The chicken actually got a tiny bit burned because it cooked so quickly. It came out tasting a bit too strongly of lime, but it was still very, very good.

    Next time I think I’ll add some soy sauce to the marinade, and some vegetables (like green beans or bamboo shoots, or maybe broccoli).
